Welcome to GEN Brooklyn!

Located in the heart of Prospect Heights, GEN has been part of the Brooklyn community since 2004.

Today, we are entering an exciting new chapter as we evolve into GEN Japanese Izakaya —bringing together the warmth and energy of a neighborhood izakaya with a serious commitment to ingredients, technique, consistency, and hospitality.

Our atmosphere may be relaxed and approachable. Our standards are not.

We are building a kitchen where every detail matters—from sourcing and preparation to knife work, rice, seasoning, temperature, presentation, cleanliness, timing, and consistency.

Our evolving menu brings together Japanese comfort food, izakaya dishes, sushi, seasonal ingredients, and a new ramen program. We want familiar Japanese food to be executed with exceptional care while continuing to explore new ideas that feel natural to Brooklyn and to GEN.

At the heart of this next chapter is OMOTENASHI —the Japanese spirit of thoughtful hospitality and genuinely caring for the person in front of you.

We believe OMOTENASHI begins long before a dish reaches the guest. It can be found in how we respect an ingredient, prepare our station, sharpen a knife, make rice, communicate with a teammate, maintain our workspace, and approach every plate with intention.

We are seeking a Sushi Chef who shares that mindset.

The ideal candidate has solid sushi experience, strong knife skills, an understanding of fish handling and preparation, and respect for the fundamentals of Japanese cuisine. Experience with ramen or other areas of Japanese cooking is a plus.

Beyond technical ability, we are looking for someone who brings discipline, curiosity, consistency, humility, and pride to the kitchen—someone who can contribute their own experience while remaining open to learning, collaboration, and continuous improvement.

As a small team entering a new phase, this is also an opportunity to help shape our standards and kitchen culture for the future.

We are not simply trying to make GEN better than it was yesterday.

We want to create an experience that goes beyond what our guests expect from a neighborhood Japanese izakaya—and we are looking for people who want to build that with us.

What We Offer

• Competitive Pay: $22–$28/hour, based on experience

• Consistent Schedule: 4–5 days per week

• Balanced Shifts: Generally around 8 hours, starting between 2:00 PM and 3:00 PM through our 10:00 PM close and standard kitchen wrap-up

What We're Looking For

• Sushi Experience: Prior professional sushi-making experience is required, including solid knife skills and proper fish handling and preparation

• Japanese Cuisine: A strong appreciation for the fundamentals of Japanese cooking; experience with ramen or other areas of Japanese cuisine is a plus

• Craft & Curiosity: A genuine desire to keep learning, refining technique, and becoming better at what you do

• Teamwork: Open-minded, communicative, and willing to contribute your experience while remaining open to feedback, direction, and continuous learning

• Professionalism: Dependable, punctual, self-motivated, and able to work with a sense of urgency while remaining calm and focused in a fast-paced kitchen

• Attention to Detail: High standards for cleanliness, organization, consistency, and presentation

• Pride & Responsibility: Someone who takes ownership of their station, respects their teammates and ingredients, and cares about the quality of every dish that leaves the kitchen
