LAMINATOR / PASTRY CHEF

Louma is brand-new bakery in West LA with a mission: blending artisanal baking with social impact. Equipped with top-notch equipment, we’re creating a space where creativity, craftsmanship, and community come together - and we’re looking for passionate bakers to join our launch team.

Position Overview

The Laminator / Pastry Chef will focus primarily on the production of laminated pastries, including croissants, pain au chocolat, and seasonal creations.

You will be responsible for producing consistently excellent laminated doughs and finished pastries while carefully managing dough temperature, butter consistency, fermentation, proofing, shaping, and baking. You will work closely with the Head Baker and production team to maintain quality, meet daily production goals, and develop a strong pastry program as the bakery grows.

Responsibilities:

• Prepare and laminate croissant and other enriched doughs according to established recipes and production schedules

• Perform folds, sheeting, shaping, and portioning with accuracy and consistency

• Carefully manage dough and butter temperatures throughout the lamination process

• Monitor dough development, resting, and proofing to achieve proper structure, flavor, and volume

• Identify and troubleshoot common lamination issues, including butter breakage, uneven layers, shrinkage, and proofing inconsistencies

• Minimize waste while maintaining high standards for yield, size, and appearance

• Shape and assemble croissants, pain au chocolat, and seasonal laminated pastries

• Prepare pastry fillings, creams, glazes, toppings, and garnishes as needed

• Bake pastries to established standards for color, texture, flavor, and consistency

• Finish products neatly and precisely, with close attention to presentation

• Support the development and testing of seasonal pastries and new flavor combinations

Quality Assurance

• Conduct regular visual inspections and taste tests to ensure product quality and freshness
• Communicate any issues with ingredients, equipment, or production to the Head Baker

Cleanliness & Organization

• Maintain a clean, organized, and efficient workspace
• Follow all hygiene, sanitation, and food safety protocols
• Assist with general cleaning to keep the bakery in excellent condition

Team Collaboration

• Work collaboratively with bakery and kitchen team members to meet daily production goals
• Communicate clearly and respectfully with the Head Baker and other staff

Requirements:

• Minimum 1-2 years experience as a baker or pastry chef- with hands-on laminated dough production required.
• Basic understanding of baking techniques, ingredient functionality, and pastry/bread fundamentals
• Ability to follow recipes and production schedules accurately
• Strong attention to detail and commitment to quality
• Ability to work efficiently in a fast-paced environment
• Passion for baking and a willingness to learn and grow
