Position Overview
The Wok Cook is responsible for preparing, seasoning, and cooking stir-fried and other wok-based menu items according to established recipes and quality standards. This role requires high-speed, high-precision cooking skills, strong food safety knowledge, and the ability to work efficiently during peak service times
- Food Preparation: Prep ingredients, season, and cook/stir-fry all soups, meats, vegetables, seafood, poultry, and other items in industrial woks
- Recipe Compliance: Follow recipes and presentation standards; ensure portion sizes and flavors are consistent
- Station Setup: Set up wok station, grill, and sauté items according to par levels before service
- Quality Control: Check ingredient freshness, maintain FIFO (First-In, First-Out) rotation, and ensure proper labeling and storage
- Hygiene & Safety: Keep wok station, coolers, and equipment clean, organized, sanitized, and stocked; comply with all health codes
- Teamwork: Coordinate with other kitchen stations for timely service; assist where needed to meet guest service standards Required Skills & Qualifications
Experience: 12+ months of professional cooking experience with wok use; 3+ years preferred in high-volume Asian kitchens
Technical Skills: Advanced knife handling, sauté, fry, steam, and wok cooking techniques
Knowledge: Understanding of Asian cooking methods, seasonings, and sauces
Physical Ability: Ability to stand for long periods, lift up to 50 lbs, and work in a fast-paced environment
Certifications: Serv-Safe or equivalent food safety certification
