Chef de Cuisine / Opening Kitchen Manager

Limousine is a new cocktail bar opening in Greenpoint, Brooklyn from the owners of Five Leaves and Goldies.

Our concept is centered around exceptional classic cocktails, warm hospitality, and a concise menu of refined small plates. The kitchen is intentionally small, with a focused menu featuring items such as oysters, steak tartare, deviled eggs, and other thoughtful bar snacks designed to complement the beverage program.

We're looking for a chef who is excited by the opportunity to build something from the ground up.

The ideal candidate is an ambitious Sous Chef or Chef de Cuisine who has worked in excellent kitchens, understands organization and systems, and is ready to lead a kitchen of their own.

This is a hands-on leadership position that will oversee all aspects of our kitchen operation from pre-opening through daily service.

Expected commitment : Approximately 50 hours per week.

As we prepare to open in early August, you'll work closely with the ownership team to:

• Collaborate on refining and testing the menu
• Develop recipes and standard operating procedures
• Create prep lists and production systems
• Organize and set up the kitchen
• Assist with purchasing equipment and smallwares
• Hire and train the opening kitchen team
• Establish cleanliness, food safety, and organizational standards

Once we're open, responsibilities will include:

• Leading service 3–4 nights per week on the line during our busiest shifts
• Managing day-to-day kitchen operations
• Writing weekly prep guides and production schedules
• Assisting with prep as needed
• Ordering all food and kitchen supplies
• Maintaining Department of Health standards and an exceptionally clean kitchen
• Ensuring consistency and quality control
• Training, mentoring, and developing the kitchen team
• Working with ownership on seasonal menu changes and new dishes
• Monitoring food cost, waste, and inventory

We're interested in chefs who:

• Have experience as a Sous Chef, Chef de Cuisine, or senior line cook in quality restaurants
• Thrive in organized, systems-driven kitchens
• Lead by example and enjoy mentoring others
• Can balance creativity with consistency and execution
• Are comfortable working in a small, collaborative environment
• Want the opportunity to build and shape a kitchen from its very beginning

Experience running an entire kitchen is a plus, but not required. We value strong fundamentals, leadership potential, curiosity, and a great attitude just as much as previous titles.
