Position Overview Executive Chef – Limelight Hotels – Mammoth, Mammoth Lakes, US. The Executive Chef manages day‑to‑day operations of the hotel culinary department, including menu development, food purchasing, and production for all hotel food and beverage outlets. The role operates within budget guidelines, maintains kitchen quality and cleanliness, and reports to the Director of Operations. Salary range: $95,000 – $110,000 per year. Positions are salaried and eligible for bonus. Application deadline: June 1, 2026. Essential Job Functions Oversee monthly food inventory, coordinate with Purchasing Manager, and ensure purchases align with budget. Maintain appropriate food portions, supervise quality of food preparation and presentation, and uphold the hotel’s pricing policy. Manage food preparation for all hotel food and beverage outlets. Create staff schedules based on projected revenue, covers, and staffing guides. Plan, write, and update menus for all restaurants, room service, and banquet operations. Submit monthly financial reports with the Director of Finance, explaining variances in food and labor costs. Ensure proper care of kitchen equipment and control operating and maintenance costs. Monitor inventory levels, order supplies, and implement cost‑control measures to maintain quality. Train, supervise, and evaluate all culinary and stewarding personnel. Lead monthly departmental meetings and pre‑shift meetings across outlets to review menu changes and gather staff feedback. Manage recurring recipe pricing and daily food purchasing. Enforce food safety regulations and maintain a sanitary kitchen environment. Perform other duties as assigned. Qualifications Education & Experience Requirements Culinary degree or equivalent preferred. 5+ years of progressive experience in culinary operations. 4+ years of culinary management experience, with at least 2 years as Executive Sous Chef or Sous Chef in a luxury hotel or multi‑outlet restaurant. Knowledge, Skills & Abilities Extensive knowledge of culinary techniques and kitchen operations. Strong leadership and team‑management skills, including staff training and mentoring. Ability to develop creative, high‑quality menus while controlling costs. Proficiency in food safety, sanitation regulations, and HACCP standards. Strong organizational and time‑management skills. Experience in inventory management, ordering, and vendor relations. Ability to monitor food and labor costs while optimizing kitchen efficiency. Excellent problem‑solving and communication skills. Collaboration with other departments. Thrives in a fast‑paced, high‑pressure kitchen environment. Experience with banquet and event catering. Knowledge of kitchen equipment maintenance and troubleshooting. Proficiency in Microsoft Office and kitchen management software. Adaptability to changing menus, dietary restrictions, and guest preferences. Passion for culinary innovation and industry trends. Work Environment & Physical Demands Reach, crouch, kneel, stand, walk, and remain on feet for extended periods. Regularly work in wet, hot, and humid conditions; may need to walk on slippery and uneven surfaces. Occasional lifting, pushing, or pulling up to 50 lbs.
