Sous Chef

The Duck & The Peach, La Collina, and The Wells is a trio of Washington, D.C. restaurants dedicated to creating meaningful, delicious experiences through thoughtful hospitality. We are passionate about letting ingredients speak for themselves. We aim to partner with local farmers and producers to create satisfying and delicious meals as well as a pantry resource for their next dinner party. Honoring ingredients and celebrating connections, we take local ingredients and transforms them in a menu inspired by California cuisine with a touch of New England.

Essential Job Functions

In partnership with Executive Chef/Partner Katarina Petonito, this role is responsible for leading and supporting the kitchen team through a hands-on, collaborative approach:

• Lead by example to cultivate a professional, respectful, and high-performing kitchen culture

• Train and mentor kitchen staff in all aspects of food preparation, technique, and execution

• Uphold consistent standards of quality, presentation, and taste across all menu items

• Monitor and manage plate costs in alignment with targeted food cost goals

• Oversee ordering, inventory management, and product utilization to ensure efficiency and minimize waste

• Support menu development through creativity, feedback, and execution

• Assist in onboarding and ongoing training of all culinary team members

• Step into a service chef role as needed to support daily operations and ensure smooth service

• Perform additional duties as assigned to support the success of the team and restaurant

About the Role

This is a hands-on, working chef position that requires active leadership on the line. The ideal candidate is passionate about maintaining high standards and takes pride in every dish that leaves the kitchen.

Qualifications

• 2+ years of experience in a leadership position in a high-volume, upscale restaurant preferred
• Ability to stand and work on your feet for up to 10 hours
• Ability to lift and carry 50+ lbs as needed
• Bilingual in English and Spanish is a plus
• Must be able to obtain a Food Manager License
