Our client is launching a standout, high-energy brasserie-style restaurant in the heart of West Palm Beach. This is a modern European brasserie concept , inspired by the great Parisian dining rooms: lively, buzzy, elegant, and built around exceptional execution at volume.

We are seeking an Executive Chef or highly accomplished Chef de Cuisine ready to step up , to lead the kitchen from opening through to long-term success.

️ The Concept

A contemporary take on a classic French/Mediterranean brasserie , drawing inspiration from iconic Parisian-style dining rooms known for:

• All-day dining energy (lunch through late evening service)
• Classic French foundations with Mediterranean influence
• Signature dishes such as steak frites, oysters, tartares, grilled fish, rich sauces, and seasonal European classics
• High-volume, high-turnover service without compromising quality
• A vibrant, social atmosphere where the kitchen is central to the guest experience

This is not formal fine dining — it’s refined, energetic, and consistent brasserie cooking at scale .

The Role

As Executive Chef, you will:

• Lead the full kitchen operation for a high-volume flagship opening
• Design and execute a menu rooted in classic brasserie cooking with modern refinement
• Build and train a strong, disciplined brigade culture from the ground up
• Deliver consistency across extremely busy service periods
• Oversee all kitchen financials including GP, labour, stock control, and supplier management
• Work closely with front-of-house leadership to create seamless service flow
• Maintain presence on the pass during peak service and lead by example

The Ideal Candidate

We are looking for someone who is:

• A proven Executive Chef or senior Chef de Cuisine in premium restaurants, hotels, or high-volume brasserie-style operations
• Experienced in French, Mediterranean, or European brasserie cuisine
• Confident running busy, all-day dining operations at scale
• Strong in leadership, structure, and kitchen culture building
• Commercially aware with excellent cost control and operational discipline
• Calm, precise, and highly consistent under pressure
• Passionate about classic cooking executed with modern standards

This is also open to a strong Chef de Cuisine ready to take the next step into an Executive Chef role .
