Description ALBERT HOTEL is hiring for a CHEF DE CUISINE An urban oasis, tucked away off of Main Street in the heart of Fredericksburg, TX, Albert Hotel offers a peaceful yet sophisticated luxury experience in Texas's famed Hill Country. Opened in January 2025, the property features 105 thoughtfully appointed guest rooms and suites, along with uniquely designed bunk rooms and a private house with custom furnishings, locally-curated amenities, and thoughtful touches. With the guest experience in mind, Albert's elevated amenities include a sunken limestone pool featuring an outdoor bar and cabanas, state-of-the-art fitness center, and a 2,000-square-foot full-service spa. Additionally, the property is home to four on-site culinary outlets, including The Wellhouse and Junebug’s BBQ. Albert boasts 3,600-square-foot of semi-open air event space, a 1,200-square-foot mezzanine deck, and an expansive event lawn, making it a prime destination for weddings, private events, and intimate gatherings. What you'll do: Supervise and coordinate activities of all kitchen staff; instruct the team in the preparation, cooking, and presentation of menu items Maintain knowledge of menu, preparation methods, ingredient awareness, and quality standards Identify problems before they arise and implement plans of action to address these issues Coach team members in a patient, clear, and concise manner Maintain knowledge of kitchen equipment and organizational resources for repairs and preventative maintenance Demonstrate new cooking techniques and equipment to the staff Prepare and cook foods of all types for daily operations and special events Inspect food preparation, storage, and serving areas to ensure safe, sanitary food-handling practices; ensure employees follow standards and regulations Order or requisition food and other supplies needed to ensure efficient operation; verify quantity and quality of received products Determine production schedules and staff requirements necessary to ensure the timely delivery of services Collaborate with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients, anticipated volume Assist with estimating the amount and cost of required ingredients and supplies; negotiate pricing with sales representatives Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs Ensure staff have a complete understanding of their job requirements and sufficient training before holding them accountable for results Plan, direct, and supervise the food preparation, purchasing, and cooking activities of multiple kitchens or outlets within the establishment Follow inventory standards and procedures to consistently conduct an accurate inventory Meet with members of the sales team and the Executive Chef to discuss menus for special events as needed Ensure immediate response is given to guest comments and concerns, and apply corrective measures when necessary Ensure open lines of communication with all departments and upper management at all times via email, logbooks, meetings, etc., to ensure all needs of the outlet are met Ensure that all equipment is maintained in good, safe working condition; arrange for equipment purchases and repairs as needed Adhere to and enforce all national, state, and local regulations in regards to labor and food safety/sanitation Who you are: You have a High School Diploma or a General Education Degree You have a state-issued food handling certification as required You have 5+ years of related experience in the hospitality or culinary industry You can read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals You can write routine reports and correspondence You can speak effectively before guests and groups of co-workers BENEFITS We are proud to offer competitive wages and the following benefits for full-time employees: Up to 3 weeks paid time off annually 50% off discount at most New Waterloo restaurants 401K matching Paid holidays Discounts at our shops, hotels + local partnerships ABOUT NEW WATERLOO New Waterloo is a community-centric independent hospitality company based in Austin, Texas.
