Kitchen Supervisor PM

Kitchen Supervisor is responsible for the successful operation of the kitchen in the Moody Gardens Hotel, thus contribution to the overall success of Moody Gardens. Kitchen Supervisor will be responsible for leading outlets to include Cafe in the Park and Shearns Seafood. Maintaining high level of sanitation and cleanliness.

Position guidelines include, but are not limited to, established company and department policies and procedures and all supervisory directives. The incumbent is expected to exercise sound, reasonable judgment and initiative, and give high priority to accuracy and details in the performance of job responsibilities.

Essential functions include coordinating all food production needs and food presentation operations for outlets, ensuring the production of high quality food for the banquets as well as all other food outlets of Moody Gardens, maintaining a high quality image through effective housekeeping, maintenance, and sanitation in areas of responsibility, and operating in compliance with all local, state, and federal laws and government regulations.

• Coordinate all food production needs and food presentation operations for outlets
• Ensure the production of high quality food for the banquets as well as all other food outlets of Moody Gardens
• Maintain a high quality image through effective housekeeping, maintenance, and sanitation in areas of responsibility
• Maintain and evaluate existing food concepts and the development of creative new food concepts which ensure the highest quality food and profitability
• Operate within the budgeted guidelines, and maintain food cost percentages
• Orienting new employees for which you are in charge and coordinate internal training and developmental programs when appropriate
• Implement and support control procedures within the department
• Staff kitchen to meet kitchen responsibilities
• Ensure good safety practices of kitchen employees and assist in the maintenance of proper emergency and security procedures
• Assist Executive Chef with kitchen operations and banquets
• Estimate daily production needs on a weekly basis and communicates production needs to kitchen personnel daily.
• Supervise and coordinate activities of cooks and workers engaged in food preparation
• Any and all other duties as assigned; duties are subject to change as management deems necessary to best serve the needs of Moody Gardens
• Leads shifts while personally preparing food items and executing requests based on required specifications.

Education/experience requirements include a 2-year minimum in a leadership role overseeing minimum of 5 people, ability to obtain any government required license or certificates, CPR certification or First Aid training preferred, and must obtain TABC & Food Handlers Certification prior to beginning work.

• Must be reliable and responsible
• Ability to speak Spanish preferred
• Ability to read, listen, and communicate in English both verbally and in writing
• Basic math skills to understand measurements, requisition amounts, and portion sizes
• Ability to operate kitchen appliances such as stoves, ovens, mixers, etc.

Physical requirements include the ability to grasp, lift, carry, or otherwise move or push goods on a hand cart weighing up to 50 pounds regularly, perform duties in confined spaces, remain on feet for long periods of time, perform duties within extreme temperature ranges, and able to work mornings, swing, nights, holidays, and weekends.
