We are seeking an experienced Sushi Chef to join a modern, upscale steakhouse known for its premium steaks, fresh seafood, raw bar, sushi program, and elevated dining experience.

This is an exciting opportunity for a talented culinary professional who is passionate about craftsmanship, precision, and delivering exceptional quality in a high-volume, chef-driven environment.

As Sushi Chef, you will oversee the preparation and execution of high-quality sushi and raw bar offerings while maintaining the highest standards of food quality, presentation, consistency, and food safety. You will work closely with the culinary leadership team to deliver an exceptional guest experience.

Key Responsibilities

• Prepare and present high-quality sushi, sashimi, nigiri, rolls, and specialty items.
• Maintain exceptional standards for product quality, freshness, and presentation.
• Ensure proper handling, storage, and preparation of seafood.
• Manage daily mise en place, inventory, and ordering for the sushi station.
• Maintain a clean, organized, and food-safe work environment.
• Collaborate with culinary leadership on seasonal features and menu development.
• Train and mentor team members on sushi preparation and quality standards.
• Ensure compliance with all food safety and sanitation regulations.
• Support overall kitchen operations during busy service periods.

Qualifications

Required

• 3+ years of Sushi Chef experience in upscale restaurants, fine dining, steakhouses, seafood restaurants, Japanese restaurants, omakase concepts, or chef-driven kitchens .
• Strong knife skills and expertise in sushi, sashimi, nigiri, and raw seafood preparation.
• Knowledge of seafood handling, food safety, and sanitation standards.
• Ability to work efficiently in a high-volume, fast-paced kitchen.
• Strong attention to detail, consistency, and presentation.
• Excellent teamwork and communication skills.

Preferred

• Experience in a premium steakhouse with a sushi or raw bar program.
• Experience with menu development and seasonal offerings.
• Food Handler or ServSafe Certification.
