Position Summary The Executive Pastry Chef is responsible for the overall leadership, creativity, and execution of the resort's pastry and bakery operations. This leader will oversee all desserts, breads, viennoiserie, chocolates, amenities, banquet pastry, specialty cakes, and seasonal offerings while maintaining exceptional culinary standards, financial performance, and team development. The ideal candidate is an innovative luxury hospitality professional who thrives in a high‑volume environment without compromising quality, consistency, or artistry. Key Responsibilities Lead all pastry and bakery production across multiple food & beverage outlets, banquets, in‑room dining, cafés, and special events. Develop innovative, seasonally inspired dessert menus showcasing local Hawaiian ingredients and sustainable sourcing. Partner closely with the Executive Chef and culinary leadership to deliver cohesive dining experiences. Recruit, train, mentor, and develop a high‑performing pastry team. Maintain exceptional product consistency while continually elevating presentation and creativity. Oversee purchasing, inventory management, labor scheduling, food cost, and departmental budgeting. Ensure compliance with all food safety, sanitation, and HACCP standards. Collaborate with banquet, restaurant, and events teams to execute flawless weddings, VIP functions, and luxury experiences. Foster a culture centered on craftsmanship, teamwork, accountability, and continuous improvement. Ideal Candidate Profile Previous Executive Pastry Chef or Executive Sous Pastry Chef experience within a luxury hotel or resort. Experience with Forbes Five‑Star, Michelin, Relais & Châteaux, Five Diamond, or comparable luxury hospitality environments strongly preferred. Strong background overseeing multiple restaurants, banquets, and high‑volume pastry production. Expertise in artisan breads, plated desserts, viennoiserie, chocolate work, celebration cakes, and modern pastry techniques. Demonstrated success developing and mentoring pastry professionals. Excellent financial acumen with experience managing labor, purchasing, food cost, and inventory. Passion for sustainability, locally sourced ingredients, and seasonal menu development.
