Michelin Bib Gourmand (2025) James Beard Foundation Semifinalist (2020, 2022, 2023) PAGU – Chef de Cuisine/Executive Chef PAGU is a Michelin awarded Japanese tapas restaurant led by three‑time James Beard semifinalist Chef/Owner Tracy Chang, located between Central Square and MIT in Cambridge. Our food celebrates local ingredients through Japanese and Spanish techniques, and our work extends beyond the dining room through cooking classes, events, and community partnerships. Role Responsibilities Team & Leadership Training, coaching, and team development Daily floor leadership and accountability Scheduling Operations Opening/closing with a heavy focus on service and closing Inventory management and procurement Managing service flow, expo, and private dining/events Ensuring preparation is done ahead of time for all events, both on‑site and off‑site Maintaining aesthetics, ambiance, and standards Maintaining quality of prep and service Recycling, compost, trash Equipment maintenance management Cleaning and organization Communications with FOH managers Food & Product Compliance with health and city regulations Recipe knowledge, development, sourcing, costing, pricing Allergy knowledge and ability to train others Systems development in tools, resources and ongoing education of BOH, FOH to ensure continued compliance and excellence Guest Relations & Community Building lasting guest relationships Managing guest databases and communications (Resy, Mailchimp, Tripleseat) Community engagement and outreach Administrative & Financial Food costing, pricing Food waste management Managing labor hours, BOH team scheduling Managing product mix Revenue tracking and sales goals (daily/weekly/monthly) Systems & Tools Google Suite, Toast, Resy, Tripleseat, Stripe, Shopify, DoorDash Certifications ServSafe Choke Saver Compensation/Benefits Salary depending on experience ($90k+) + bonus 2 weeks paid vacation Paid stages at other restaurants Location 310 Mass.
