Kitchen Supervisor

ABOUT THIS ROLE

The Turf Club Restaurant and Lounge is a Marc Forgione restaurant at Belmont Park, each with its own dedicated kitchen. This role is the senior cook in charge of that kitchen on the shifts they work — running the line, keeping the team on pace, and making sure everything going out matches standard, even when the Chef de Cuisine isn’t on the floor.

POSITION SUMMARY

The Kitchen Lead is the senior cook in their kitchen — one per kitchen — responsible for running service, supervising cooks and dishwashers on shift, and upholding the recipes and presentation standards set by Chef Marc Forgione and the Chef de Cuisine.

KEY RELATIONSHIPS

• Chef de Cuisine — sets standards, recipes, and staffing direction; the Kitchen Lead is the Chef de Cuisine’s point person on the floor during their shift.
• Cooks — direct on-shift supervision, station assignments, and pacing.
• Dishwashers — direct on-shift supervision.

CORE RESPONSIBILITIES

• Run the kitchen during assigned shifts, keeping stations on pace and food at standard in the Chef de Cuisine’s absence.
• Supervise cooks and dishwashers on shift, including station assignments and workflow.
• Execute and enforce recipes and presentation standards set by Chef Marc Forgione and the Chef de Cuisine.
• Oversee prep lists and mise en place to ensure the kitchen is ready ahead of service.
• Maintain food safety, sanitation, and health code standards during their shift.
• Flag staffing, quality, or equipment issues to the Chef de Cuisine.
• Help onboard and train new cooks and dishwashers on station standards.
• Support kitchen readiness for live race days, marquee events (Belmont Stakes, Breeders’ Cup), and dark-day service.

QUALIFICATIONS

• 3+ years of line cook experience, including experience running a station or shift without direct supervision.
• Comfort supervising other cooks and dishwashers during service.
• Ability to execute recipes and presentation standards precisely and consistently.
• Food safety certification.
• Ability to work a schedule built around a live racing calendar, including weekends, holidays, and marquee event dates.
