Chef de Partie
HED NYC - EWC Hospitality Group
HED NYC is seeking a dedicated and disciplined Chef de Partie to join our fine dining kitchen team. HED NYC is a tasting menu restaurant focused on delivering a refined and thoughtful guest experience through seasonal cuisine, precision, hospitality, and high-level execution.
This position will work closely with the Executive Chef and kitchen leadership team to execute and maintain the restaurant’s culinary program to the highest standards. The Chef de Partie is responsible for overseeing daily preparation, organization, station management, and service execution for a designated section of the kitchen within our 5-course tasting menu experience.
Responsibilities include:
- Execute and maintain all dishes according to established recipes, plating guides, and presentation standards
- Follow direction from the Executive Chef and kitchen leadership to ensure consistency, quality, and precision during preparation and service
- Prepare daily mise en place and maintain organization of assigned station
- Properly manage station setup, service execution, and breakdown procedures
- Ensure all food is prepared with consistency, cleanliness, timing, and attention to detail
- Assist with plating and expediting during service while maintaining fine dining standards
- Monitor product freshness, quality, storage, labeling, and proper rotation of ingredients
- Maintain cleanliness, sanitation, and organization of kitchen stations, refrigeration, storage areas, and equipment
- Communicate effectively with kitchen and front-of-house teams to ensure smooth and timely service operations
- Assist with inventory management, receiving deliveries, stock rotation, and minimizing product waste
- Properly operate and maintain kitchen equipment, tools, and work areas
- Support and assist other kitchen stations as needed during service
- Work efficiently under pressure in a fast-paced fine dining environment while maintaining composure and professionalism
- Maintain professional appearance, punctuality, and adherence to HED NYC kitchen standards and policies
- Uphold all NYC Department of Health food safety and sanitation standards
- Assist in training and supporting junior kitchen staff when necessary
The ideal candidate should have strong organizational skills, professionalism, attention to detail, and the ability to consistently execute high-level cuisine in a fine dining environment. Previous experience in tasting menu, fine dining, or Michelin-level kitchens is preferred.
