General requirements Thorough understanding of fine dining standards, policies, and procedures. Ability to follow and uphold recipes and quality requirements. Commitment to maintaining sanitation, cleanliness, and safety standards. Excellent interpersonal, problem-solving, and decision‑making skills. Ability to maintain composure and professionalism under pressure. Must have or obtain a California manager's food handler certification.
