Pastry Chef
HED NYC - EWC Hospitality Group
HED NYC is seeking a dedicated and detail-oriented Pastry Chef to join our fine dining team. HED NYC is a tasting menu restaurant focused on delivering a refined and thoughtful guest experience through seasonal cuisine, precision, hospitality, and high-level execution.
This position will work closely with the Executive Chef and Pastry Consulting Chef to execute and maintain the restaurant’s pastry and dessert program to the highest standards. The Pastry Chef is responsible for daily preparation, organization, consistency, and service execution of all pastry components for our 5-course tasting menu experience.
Responsibilities include:
- Execute and maintain all desserts, petit fours, breads, ice creams, sorbets, and pastry components according to established recipes and presentation standards
- Follow guidance and direction from the Executive Chef and Pastry Consulting Chef to ensure consistency and quality control
- Prepare daily mise en place and maintain organization of the pastry station
- Ensure all pastry items are prepared with precision, consistency, cleanliness, and attention to detail
- Assist with plating and service during dinner operations while maintaining fine dining presentation standards
- Monitor product freshness, quality, storage, and proper labeling of ingredients
- Maintain cleanliness, sanitation, and organization of all pastry workstations, equipment, refrigeration, and storage areas
- Assist with inventory management, ordering, receiving deliveries, and stock rotation for pastry ingredients and supplies
- Properly operate and maintain pastry equipment and kitchen tools
- Communicate effectively with kitchen leadership and team members to ensure smooth service operations
- Support overall kitchen operations and assist other stations when needed during service
- Maintain professional appearance, punctuality, and adherence to HED NYC kitchen standards and policies
- Work efficiently in a fast-paced fine dining environment while maintaining composure and attention to detail
- Uphold all NYC Department of Health food safety and sanitation standards
The ideal candidate should have strong organizational skills, attention to detail, professionalism, and the ability to execute high-level pastry production consistently in a fine dining environment. Previous experience in tasting menu or Michelin-level kitchens is preferred
