Role Overview
We are looking for a reliable, detail-oriented Prep Cook to support our kitchen team at Pizza Studio Tamaki NY. This is an excellent opportunity for someone who is eager to develop their culinary skills in a focused, craft-driven kitchen environment. The Prep Cook plays a vital role in ensuring our line is fully set up and ready for service — your work behind the scenes directly supports the quality that reaches every guest's table.
• Execute daily prep lists accurately and efficiently before service begins
• Prepare and portion dough balls according to established weights and fermentation schedules
• Wash, peel, slice, and portion vegetables, proteins, and garnishes to spec
• Produce house-made sauces, infused oils, and other components per recipes
• Maintain cleanliness and organization of prep areas, walk-ins, and dry storage
• Label, date, and properly store all prepped items following FIFO rotation
• Follow all food safety and sanitation protocols in accordance with NYC DOH standards
• Assist the line during service as needed, including restocking ingredients and running prep
• Receive and check in deliveries, flagging any quality or quantity discrepancies
• Assist with end-of-shift breakdown, cleaning, and kitchen reset
• Communicate proactively with the chef or kitchen manager regarding low inventory or prep needs Qualifications
Required
• Prior experience in a professional kitchen, food service, or culinary program (1+ year preferred)
• Basic knife skills and comfort with high-volume vegetable and protein prep
• Ability to follow recipes, portioning guides, and prep lists with precision
• Strong attention to detail and commitment to consistency
• Ability to work early morning or daytime prep shifts, including weekends
• Positive, team-first attitude with a willingness to learn
• NYC Food Handler Certification (or ability to obtain within 30 days of hire) Preferred
• Familiarity with pizza dough preparation or fermentation-based products
• Experience in an Italian or Japanese-inspired kitchen concept
• Interest in artisan ingredients, seasonal produce, or scratch cooking
• Culinary school training or equivalent hands-on experience What We Offer
