About Us
Carmine’s serves big, family-style Italian platters meant for sharing. Our Penn Quarter location is a go-to for groups, pre-theater dinners, celebrations, and out-of-town visitors. We’re looking for a Sous Chef who can keep our kitchen running smoothly and our platters coming out generous, consistent, and delicious.

The Role
As Sous Chef, you’ll partner with the Executive Chef to lead daily kitchen operations. You’ll be a hands-on leader on the line, setting the standard for quality, speed, and teamwork during high-volume service, including busy event nights and weekends.

What You’ll Do

• Run the line during service and keep ticket times and plate quality on point
• Supervise, train, and motivate line cooks, prep cooks, and dishwashers
• Oversee prep, ordering, receiving, and inventory to control food costs and waste
• Uphold Carmine’s recipes, portioning, and presentation standards
• Maintain a clean, organized kitchen that meets all DC Health food safety requirements
• Help with scheduling and step in for the Executive Chef when needed

What We’re Looking For

• [2+] years of experience as a Sous Chef or Lead Line Cook in a high-volume restaurant
• Knowledge of Italian-American cooking is a big plus
• Strong leadership skills and the ability to stay calm in a busy kitchen
• Solid understanding of food cost, ordering, and inventory
• Food Protection Manager certification (or willingness to obtain one)
• Flexible availability, including nights, weekends, and holidays
