Job Summary:
The Executive Chef is responsible for the overall success of daily kitchen operations at Boulud Sud Miami, leading culinary teams to deliver consistent, high-quality cuisine and exceptional guest experiences. This role oversees all food preparation and support areas, including restaurant, banquet, room service, bar/lounge, associate dining, purchasing, receiving, and stewarding operations. The Executive Chef demonstrates culinary leadership through hands-on execution, menu collaboration, team development, financial accountability, sanitation compliance, and a continued focus on guest and associate satisfaction.
Job Family Core Work Activities
• Lead daily kitchen operations to ensure quality, consistency, service excellence, cleanliness, safety, and adherence to food handling and sanitation standards.
• Demonstrate culinary expertise by preparing, presenting, and overseeing high-quality food products for restaurant, banquet, room service, bar/lounge, and associate dining operations.
• Provide leadership, coaching, and direction to culinary associates, including setting performance expectations, monitoring results, and supporting professional development.
• Train kitchen associates on cooking fundamentals, proper food handling, plate presentation, menu knowledge, safety procedures, and service standards.
• Partner with Food and Beverage leadership, Banquet Chef, Catering, and other departments to support menu development, guest events, training, and operational execution.
• Monitor food quality, raw and cooked product standards, presentation, flavor, portioning, and proper storage to ensure brand and restaurant expectations are consistently met.
• Manage department controllable expenses, including food cost, supplies, uniforms, equipment, purchasing, receiving, inventory, and food storage standards.
• Review staffing levels, schedules, guest satisfaction results, comment cards, and operational data to identify opportunities for improvement and ensure service, financial, and business goals are met.
• Build an inclusive, collaborative, and respectful team environment by maintaining open communication, soliciting associate feedback, and ensuring associates are treated fairly and consistently.
• Respond to guest concerns and operational challenges with sound judgment, professionalism, and a focus on service recovery and continuous improvement.
• Ensure hotel policies, safety standards, sanitation certifications, performance management processes, and disciplinary procedures are administered fairly, consistently, and in accordance with established standards.
• Model leadership behaviors that reflect honesty, accountability, sound business decision-making, and a commitment to exceeding guest expectations.
