Manager, Food & Beverage Under the direction of the Senior Manager, Food & Beverage, the Manager is responsible for overall operation and profitability of assigned venues, including developing and maintaining well‑performing teams, achieving financial and enterprise objectives, maintaining inventory control, ensuring high‑quality customer service, complying with health and safety regulations, reviewing scheduling and staffing plans, preparing sales, inventory, personnel reports, and maximizing team morale through leadership. ESSENTIAL DUTIES AND RESPONSIBILITIES Accountable for all FOH team members; implement training programs aligned with Yaamava’s brand standards and maintain product knowledge. Ensure optimal operations during business hours by monitoring customer satisfaction and resolving complaints; direct the development of operational controls. Manage venue revenue, food cost, expense, headcount, and profit; explain variances and implement action plans to meet budgets. Collaborate with the venue Chef to oversee food costs, menu attractiveness, and presentation standards. Maintain accurate inventory of china, glassware, cutlery, and other supplies; manage replacements and minimize costs. Ensure cleanliness and sanitation standards meet codes; oversee equipment maintenance and repairs. Perform other duties assigned to support efficient department operation. SUPERVISORY RESPONSIBILITIES Interview, hire, train, plan, assign, review, and direct work; evaluate performance; reward and discipline employees; address complaints and resolve problems. Make hiring decisions and design development plans with succession planning for key roles. EDUCATION, EXPERIENCE AND QUALIFICATIONS Bachelor’s degree in Hospitality Management, Food Service, Business, or related field required.Minimum of three (3) years of restaurant or related hospitality experience required; bar experience strongly preferred.Minimum of three (3) years of supervisory experience required. Related or relevant experience may be considered in lieu of the minimum educational requirements. KNOWLEDGE, SKILLS AND ABILITIES (KSA) Proficient in Microsoft Office (Outlook, Excel, Word). Strong leadership and people‑management skills; ability to collaborate, motivate, communicate change, delegate, and prioritize in fast‑paced environments. Excellent written, verbal, and mathematical skills; capable of reading, writing, speaking English, and performing simple math operations. Maintain confidentiality and comply with all legal and regulatory requirements. Provide friendly, efficient service to guests and team members, addressing needs and resolving issues. Remain calm and efficient under pressure during busy periods. REQUIRED LICENSES, CERTIFICATIONS AND REGISTRATIONS Possibility of needing a gaming license, as dictated by the San Manuel Tribal Gaming Commission. Must obtain and maintain Responsible Beverage Service (RBS) certification. Must obtain and maintain ServSafe certification. Valid driver’s license and vehicle insurance required for commuting between locations; no operation of Tribe‑owned vehicles. PHYSICAL REQUIREMENTS / WORKING CONDITIONS – ENVIRONMENT The primary work environment is a climate‑controlled casino & resort setting.Employees may travel for meetings, trade shows, and conferences.Work includes evening, weekend, and holiday shifts; fast‑paced, high‑demand environment.Must be able to lift up to 10 pounds, move up to 40 pounds, perform sedentary computer work, and manage routine tasks such as balancing, stooping, kneeling, crouching, reaching, pushing, pulling, and repetitive motions.Adequate hearing and visual acuity are required.A neat, clean, and well‑groomed appearance is necessary.Potential exposure to fumes or airborne particles, including secondhand smoke; reasonable accommodation will be made under applicable law.
