The Kitchen Manager is responsible for the disciplined, efficient, clean, safe, and financially responsible operation of the kitchen. This is an operational leadership position rather than a Chef position . The Kitchen Manager’s primary responsibility is to ensure that established menus, recipes, standards, systems, and procedures are executed consistently while achieving the operation’s financial, quality, safety, cleanliness, and team-development goals.
The Kitchen Manager takes ownership of the kitchen as a business—ensuring the right products are purchased at the right price, properly received and stored, efficiently prepared and utilized, accurately inventoried, and consistently produced according to established standards.
Equally important, the Kitchen Manager is responsible for creating a professional, positive, accountable kitchen culture where Team Members are properly trained, treated with respect, given opportunities to develop, and proud of the kitchen in which they work.
Key ResponsibilitiesPurchasing & Product Management-
Purchase food, supplies, and operating products based upon established menus, recipes, specifications, production requirements, and anticipated business levels.
Optimize purchasing through existing contracted and preferred suppliers , maximizing contracted pricing, rebates, purchasing programs, and other negotiated benefits.
Maintain appropriate purchasing levels and pars to minimize excess inventory, spoilage, waste, emergency purchases, and out-of-contract spending.
Monitor product pricing, yields, specifications, and usage and proactively identify opportunities to reduce cost without compromising established quality standards.
Ensure purchasing decisions support budgeted food-cost objectives.

Ensure all deliveries are properly received, inspected, counted and, where applicable, weighed before acceptance.
Verify product quality, quantities, specifications, temperatures, pricing, and condition against purchase orders and invoices.
Ensure products are immediately and properly stored using established food-safety and inventory-management practices.
Maintain organized, clearly labeled and exceptionally clean walk-ins, freezers, dry storage, and production areas.
Enforce FIFO, proper dating and labeling, shelf-life standards, and product rotation.
Maintain accurate inventories and conduct physical inventories according to established schedules.
Investigate inventory variances and take corrective action when necessary.

Establish and maintain appropriate production pars based upon historical usage, forecasts, reservations, events, seasonality, and anticipated business levels.
Ensure prep and production are completed in the correct quantities and at the appropriate times.
Prevent both overproduction and underproduction.
Monitor yields, portions, trim, spoilage, waste, and product utilization.
Ensure established recipes, portions, preparation procedures, and presentation standards are consistently followed.
Develop systems that maximize product utilization and minimize unnecessary food waste.

Maintain a sparkling-clean kitchen at all times —not simply a kitchen that passes inspection.
Establish and enforce daily, weekly, monthly, and quarterly cleaning schedules for all kitchen, storage, refrigeration, equipment, and support areas.
Ensure compliance with all food-safety, sanitation, temperature-control, allergen, personal-hygiene, and safe-food-handling requirements.
Ensure food is properly received, stored, thawed, prepared, cooled, reheated, held, and served.
Maintain appropriate sanitation, temperature, cleaning, and food-safety records.
Hold every member of the kitchen team accountable for cleanliness and sanitation throughout their shift.

Ensure kitchen equipment is properly used, cleaned, maintained, and cared for.
Identify equipment and facility issues before they become operational emergencies whenever possible.
Coordinate repairs and preventative maintenance through approved third-party vendors.
Maintain service records and follow up to ensure repairs are completed correctly and promptly.
Protect the company’s physical assets by reinforcing proper equipment use and preventing abuse, neglect, and unnecessary repair expense.

Achieve or outperform established food-cost and kitchen labor-cost budgets .
Schedule kitchen labor according to forecasted business levels, established productivity standards, and budget.
Actively manage labor throughout each shift rather than relying solely upon the posted schedule.
Monitor overtime and eliminate unnecessary overtime wherever possible.
Review food cost, purchasing, inventory, waste, labor, and productivity results and take corrective action when performance falls outside established expectations.
Understand that financial performance is a daily operating responsibility—not simply a month-end accounting exercise.

Recruit, onboard, train, coach, and develop kitchen Team Members.
Create clear expectations and hold Team Members consistently accountable for performance and behavior.
Develop stronger cooks and future kitchen leaders through training, cross-training, coaching, and increased responsibility.
Conduct regular performance conversations and address performance issues promptly and professionally.
Foster teamwork, communication, respect, urgency, accountability, and pride.
Actively work to improve kitchen morale, engagement, and retention .
Maintain a professional kitchen environment free from intimidation, disrespect, favoritism, and unnecessary conflict.
Lead by example in work ethic, organization, cleanliness, professionalism, and respect for others.
Success in this position will be measured by:
Achievement of budgeted food cost
Achievement of budgeted kitchen labor cost
Inventory accuracy and appropriate inventory levels
Reduction of waste, spoilage, and unnecessary purchasing
Purchasing compliance with contracted/preferred suppliers
Food-safety and sanitation performance
Kitchen cleanliness and organization
Equipment condition and preventative maintenance
Consistency of established recipes, portions, and production standards
Team Member retention, development, engagement, and morale
Overall consistency and operational readiness of the kitchen
The Kitchen Manager is expected to approach the kitchen with an owner’s mentality . The successful Kitchen Manager understands that every purchasing decision, labor hour, case of product, piece of equipment, sanitation practice, production decision, and Team Member interaction has an impact on the success of the operation.
The standard is a kitchen that is clean, organized, safe, properly staffed, properly stocked, financially disciplined, operationally prepared, and staffed by people who take pride in their work.
