Sous Chef

Sous Chef – Kabawa and Bar Kabawa, New York, NY – Full Time – Salary $72,500 - $77,500 annually. Responsibilities Assist in managing the line and ensuring efficient and smooth flow of service. Mentor, train, and discipline staff, including line cooks and prep cooks. Oversee service, monitor cooks’ progress and flow of service. Send daily service reports, reservation logs, and HR related processes such as trail paperwork, worker’s comp, and accident reports. Support and manage prep for service, ensuring all prep items and recipes meet standard. Enforce food and equipment safety and sanitation among all team members. Maintain kitchen equipment and report any facilities issues to senior culinary management. Monitor receiving to ensure products meet restaurant standards. Work with the Executive Chef on menu creations and daily specials. Support inventory, purchasing, and receiving of products. Support staffing needs for BOH open positions and assist in hiring and training. Required Qualifications Minimum one year experience as Junior Sous Chef, Sous Chef, or equivalent in a comparable volume restaurant. Ability to independently complete monthly inventory and ordering. Ability to train new hourly culinary team members on each station. Positive and enthusiastic attitude with desire to learn, grow, and develop skills. General knife handling, food safety and sanitation knowledge. Excellent communication, organizational, and interpersonal skills. Comfortable working in a fast-paced, high-energy environment. Ability to remain calm under pressure. Passion for food, exceptional work ethic and dedication. Willingness to accept guidance positively and implement direction productively. Able to work standing or walking for long periods. Preferred Qualifications 2+ years experience as Sous Chef in a comparable volume restaurant. Ability to train new Sous Chefs on all role responsibilities. Proven ability to run a high-volume service, including expediting. Proven ability to support all back-office administrative tasks, including facilities maintenance, inventory management, and health department checks. Track record of dependability and continuous focus on learning and development. Physical Demands Seeing, hearing, speaking, reaching. Frequent lifting up to 25 pounds, occasional lifting up to 50 pounds. Sitting, standing, bending and moving intermittently during working hours.
