FS ASSISTANT COOK

Cook Position

Purpose/Objective of the Position:

Cook meats, fish, vegetables, soups, and other hot food products, as well as prepare and divide food products before cooking them. Also performs other tasks in the food preparation and final dish areas, including plating and decorating cooked products and preparing appropriate decorations for all menu dishes.

Responsibilities:

o Promotes, works, and acts consistently with the mission of To Go Stores LLC.

o Inspects, cleans, and maintains food preparation areas, such as equipment and work surfaces, or service areas to ensure safe and sanitary food handling practices.

o Ensures that food is stored and cooked at the correct temperature by regulating the temperature of ovens, grills, fryers, roasters, and other cooking equipment.

o Ensures the freshness of food and ingredients by checking quality, tracking inventory processes (FIFO).

o Knows and consistently complies with the restaurant's standard portion sizes, cooking methods, quality standards, rules, policies, and kitchen procedures.

o Responsible for the quality of the products served.

o Stores and maintains sufficient levels of food products at line stations to operate a smooth service period.

o Handles, stores, and rotates all food products and supplies in accordance with To Go Stores, LLC policies and procedures.

o Turns or stirs food to ensure even cooking.

o Season and cook food according to recipes, personal judgment, and experience.

o Bake, roast, grill, and steam meats, fish, vegetables, and other foods.

o Weigh, measure, and mix ingredients according to recipes, using various kitchen utensils and equipment.

o Portion, arrange, and decorate dishes, according to standard portion sizes and recipe specifications, and serve the food.

o Observe and taste food to determine if it has been cooked sufficiently, using methods such as tasting, smelling, or piercing with utensils.

o Performs daily food handling and temperature logs.

o Follows proper presentation in all dishes.

o Washes, peels, and cuts fruits and vegetables to prepare them for consumption.

o Cuts and trims meats such as beef, veal, ham, pork, and lamb for hot or cold service.

o Assists in food preparation tasks during off-peak periods as needed.

o Substitutes or assists other cooks during emergencies or busy periods.

o Attends all scheduled employee meetings and offers suggestions for improvement.

o Coordinates and assists other employees in meeting customer needs and supporting restaurant operations.

o Covers for coworkers when necessary to ensure customer service standards and efficient operation.

o Oversees waste control for both raw and cooked products.

o Supports in the preparation of the Food Services area for the audit process.

o Takes on tasks designated for the Cook position on days off.

Others:

o Assists in menu planning.

o Assists in maintaining records and inventories.

o Bakes breads, rolls, and desserts.

Essential Requirements:

1. Ongoing studies in culinary arts or minimum of 1 year of food preparation experience in the restaurant industry.

2. Basic math knowledge.

3. Effective communication and teamwork skills.

4. Ability to understand and follow instructions.

5. Ability to work with little supervision.
