Senior Sous Chef

Casamara is seeking a passionate, organized, and leadership-driven Sous Chef to join our culinary team. As a key member of the kitchen leadership group, the Sous Chef will support the Chef-de-Cuisine in driving culinary excellence, operational efficiency, and team development within a high-volume, upscale dining environment.

Position Summary

The Sous Chef plays a critical role in maintaining standards of food quality, consistency, cleanliness, and team accountability. This individual will be responsible for overseeing daily kitchen operations, leading service, supporting menu development, managing labor and food cost controls, and fostering a culture of professionalism and growth.

Key Responsibilities

Kitchen Leadership

• Lead daily service and ensure smooth execution during high-volume periods
• Supervise and mentor line cooks and prep team
• Enforce culinary standards, plating consistency, and timing
• Maintain a positive, high-performance culture

Operational Excellence

• Assist in managing food cost, waste control, and inventory
• Oversee ordering, receiving, and proper storage procedures
• Maintain DOH compliance and food safety standards
• Support scheduling to align with business volume

Menu & Quality Control

• Collaborate on seasonal menu development
• Oversee recipe adherence and quality assurance
• Conduct tastings and ensure proper execution of new dishes

Team Development

• Train new hires on station setup, execution, and expectations
• Coach team members on technique and efficiency
• Assist with performance evaluations and corrective action when needed

Qualifications

• 3+ years of experience in a leadership culinary role
• Experience in upscale, high-volume restaurant environments
• Strong knowledge of Mediterranean or seasonal cuisine preferred
• Demonstrated ability to manage labor and food costs
• Excellent communication and organizational skills
• ServSafe certification (or ability to obtain)
