Grill Cook

Position Summary

We are seeking an experienced Grill Cook to run the grill station during dinner service. The position is responsible for all proteins prepared on the grill, including ribeye, steak au poivre, chicken, fish, and daily specials, cooked accurately to temperature and delivered on time. The grill station sets the pace for the line during service, and we are looking for a cook who works cleanly, stays organized under volume, and communicates well with the team.

• Execute all grill station items to recipe specification, meeting requested temperatures consistently
• Complete daily mise en place, including trimming and portioning proteins, preparing marinades and sauces, and setting the station before service
• Communicate clearly with expediters, sous chefs, and fellow line cooks throughout service
• Maintain temperature logs, product rotation, labeling, and FIFO standards
• Keep the station and equipment clean, organized, and compliant with health code requirements during service and at closing
• Receive and properly store deliveries, and support prep and other stations as needed
• Contribute to a professional and respectful kitchen environment

• Three years of grill or broiler experience in a high-volume restaurant
• Demonstrated ability to cook steaks and other proteins accurately to temperature
• Strong knife skills and solid butchery and portioning fundamentals
• Experience with French or European bistro cuisine preferred, though we will train a candidate with the right fundamentals
• Valid California Food Handler Card, or ability to obtain one within 30 days of hire
• Availability for evening, weekend, and holiday shifts
• Ability to stand for shifts of eight to ten hours, work near open flame and high heat, and lift up to 50 pounds
• Proficiency in English or Spanish; bilingual candidates preferred
