The Tides Beach Club is seeking a full‑time, year‑round Sous Chef to join our culinary team. This leadership role is ideal for a passionate and motivated culinary professional who thrives in a fast‑paced environment and is committed to delivering exceptional guest experiences. As Sous Chef, you will assist in overseeing daily kitchen operations, support and mentor team members, maintain food quality and consistency, and ensure all health and safety standards are met. The ideal candidate is organized, team‑oriented, creative, and experienced in high‑volume culinary operations. Job Summary Assist in the management of culinary personnel including hiring, training, performance reviews, wages, coaching, discipline, termination, and weekly scheduling. Create effective, cost‑efficient schedules for the culinary team based on forecast and budget. Conduct daily shift briefings to kitchen staff, covering operational focus, safety issues, specials, culinary education, and guest feedback. Liaise with hotel staff to determine daily room counts, room service requests, events, and special orders. Complete employee performance reviews/evaluations as required. Oversee daily activities such as food preparation, outlet sanitation, inventory receipts, log‑on report, and food cost report. Support Chef/Culinary Director in creating cost‑appropriate menu items and developing recipes/specials. Lead training and education of culinary staff on execution, timing, and presentation. During shift, monitor inventory of stations, control food quality, reduce waste, and ensure proper rotation. Manage inventory, par levels, and ordering/receiving; work closely with CDC to maintain stock for menu and events. Coordinate kitchen workflow and expediting to ensure a smooth operation. Stay current with culinary concepts and techniques. Know all menu items, daily features, and promotions. Work in various culinary stations as needed; be prepared to fill any role required by the chef. Practice food sanitation procedures, labeling, rotation, storage, and hygiene. Maintain proper operation and maintenance of kitchen equipment and tools. Inspect stations at shift end for food storage and sanitation. Be aware of food allergies and safety requirements. Lead by example with a clean, organized station and kitchen. Collaborate with Culinary Director to monitor and stay within budget. Engage guests through “touching tables” and ensure satisfaction. Expedite food and train for proper timing of courses. Coordinate workflow for a smooth operation. Attend scheduled meetings and training sessions. Practice safety and security procedures. Delegate tasks to ensure staff remain productive during shifts. Work with other personnel and vendors professionally and positively. Step into any needed role to deliver exceptional service and foster teamwork. Essential Functions of the Job Remain standing for up to 10 hours. Stand or stay stationary for up to 8 hours. Move and lift up to 50 lbs. Walk the property frequently. Lift items overhead. Survey property areas clearly. Move up and down stairs frequently. Remain bent over a sink or table for extended periods. Bend and reach repetitively during a shift. Use repetitive manual dexterity. Move quickly based on guest needs. Communicate accurately in public forums. Read, write, speak, and understand English. Complete a satisfactory background check. Key Skills & Experience Required 3+ years culinary experience in a high‑volume, full‑service restaurant. 1+ year culinary leadership experience. Demonstrated natural leadership with a positive, team‑focused attitude. Available and willing to work flexible hours including nights, weekdays, and weekends. Strong communication, organizational, and problem‑solving skills. Enthusiastic about the role and passionate about culinary operations. Ability to prioritize, delegate, and respond timely. Can work under pressure, multitask, and stay focused amid interruptions.
