Roka Akor is seeking a talented and passionate Sushi Chef to join our culinary team in Chicago. Combining contemporary Japanese cuisine with our signature Robata grill, Roka Akor is committed to delivering exceptional food, genuine hospitality, and memorable guest experiences.
We are looking for a chef who takes pride in craftsmanship, works with urgency and precision, and thrives in a high-volume, team-oriented environment.
ResponsibilitiesPrepare sushi, sashimi, nigiri, maki, and specialty items to company standards
Maintain exceptional knife skills and fish fabrication techniques
Ensure consistency, quality, and presentation of all dishes
Follow food safety, sanitation, and HACCP procedures at all times
Assist with daily prep, inventory management, and station organization
Maintain a clean and professional work environment
Work collaboratively with the sushi, Robata, and kitchen teams
Contribute ideas and maintain a culture of continuous improvement
Minimum 2 years of sushi chef experience in a high-quality restaurant
Strong knowledge of Japanese ingredients, fish handling, and traditional techniques
Ability to work efficiently under pressure while maintaining attention to detail
Positive attitude, strong work ethic, and professional demeanor
Availability to work evenings, weekends, and holidays
Culinary degree preferred but not required
