About La Raviole Française
La Raviole Française is bringing an iconic French specialty to New York City. Originating from the north of Provence, ravioles are delicate, handcrafted pasta unlike traditional Italian ravioli. Our mission is to introduce this centuries-old French culinary tradition through a modern, premium fast-casual experience built around exceptional ingredients, artisanal sauces, and warm hospitality. Our first flagship restaurant will open in Midtown Manhattan in September. Beyond the restaurant, we’re building a brand with ambitions to expand throughout New York and eventually across the United States through multiple locations, retail products, B2B partnerships, and franchising. This is a rare opportunity to join the company at the very beginning and help build something from day one.

The Opportunity
We’re looking for an entrepreneurial General Manager to become one of the founding members of La Raviole Française. This isn’t a traditional restaurant management position. You’ll play a key role in launching our first location, building the team, creating the culture, and helping establish the operational standards that future restaurants will follow. You’ll work directly alongside the founders, our Founder Associate (Operations), and our marketing partners to bring the concept to life. As the company grows, this role has the potential to evolve into a multi-unit leadership position.

What You’ll Do
Restaurant Opening
* Lead the entire pre-opening process from an operational perspective
* Recruit, interview, hire, and onboard the founding restaurant team
* Develop training programs and service standards
* Build opening, closing, and operating procedures
* Prepare the restaurant for a successful launch
Daily Operations
* Lead the restaurant floor during service
* Ensure exceptional guest experiences every day
* Coach and develop the team
* Create schedules and optimize labor
* Resolve guest concerns with professionalism and empathy
* Foster a positive, energetic, and accountable culture
Financial Performance
* Own restaurant profitability
* Monitor labor costs, food costs, and inventory
* Minimize waste and maximize operational efficiency
* Review daily, weekly, and monthly financial performance
* Help achieve sales and profitability targets
Food Quality & Safety
* Maintain the highest standards of food quality and consistency
* Ensure full compliance with NYC Department of Health regulations
* Oversee inventory management and food safety procedures
Team Leadership
* Hire great people
* Coach and mentor employees
* Build a culture of ownership, accountability, and continuous improvement
* Lead by example every day
Growth & Community
* Collaborate with marketing on local events and launch initiatives
* Represent La Raviole Française within the Midtown community

Qualifications
* Previous General Manager or Assistant General Manager experience in restaurants
* Pre-opening experience strongly preferred
* Strong leadership and people management skills
* Excellent understanding of restaurant financials (P&L, labor, food cost, inventory)
* Experience recruiting, training, and developing teams
* Strong operational and organizational skills
* Comfortable using modern restaurant technology (POS, scheduling, inventory, reporting)
* Passion for food and hospitality; familiarity with French cuisine is a plus
* Ability to thrive in a fast-paced environment
