Mercadito Lincoln Park is a modern Mexican restaurant focused on delivering exceptional food, hospitality, and guest experiences. We are seeking an experienced Executive Chef to lead our culinary team, drive operational excellence, and continue elevating our food quality and consistency.

Position Summary

The Executive Chef is responsible for overseeing all back-of-house operations, including culinary execution, food quality, labor management, inventory, food cost, sanitation, and team development. This is a hands-on leadership role for someone who thrives in a fast-paced, high-volume environment and is passionate about mentoring teams while maintaining exceptional standards.

Responsibilities

• Lead all kitchen operations and daily service.
• Maintain exceptional food quality, consistency, and presentation.
• Recruit, train, mentor, and develop BOH managers and hourly team members.
• Manage labor to achieve company targets.
• Control food costs through purchasing, inventory, waste reduction, and recipe adherence.
• Ensure compliance with all health department, sanitation, and food safety standards.
• Develop prep systems and kitchen organization to maximize efficiency.
• Collaborate with ownership and operations on menu development, seasonal features, and special events.
• Foster a positive, accountable, and team-oriented culture.

Qualifications

• 5+ years of Executive Chef or Executive Sous Chef experience in a high-volume restaurant.
• Strong leadership and team development skills.
• Proven ability to manage food cost, labor, and kitchen financial performance.
• Experience with inventory, ordering, recipe costing, and scheduling.
• Strong organizational and communication skills.
• ServSafe Certification preferred.
