ABOUT THIS ROLE:

At Santo Taco, we’re looking for dedicated Prep Cooks and Dishwashers to support our kitchen operations and ensure we’re set up for culinary success each day. This is a full-time or part-time role that reports directly to the Store Manager.

This role is part of our cross-training program, empowering employees to build skills beyond their core responsibilities. This enhances individual growth and strengthens our team's adaptability and resilience.

DUTIES:

PREP:

• Prepare all ingredients according to recipes and par levels.
• Ensure all stations are clean, prepped, and stocked before each service.
• Properly label and date all prepped items and rotate stock using FIFO principles.
• Assist cooks and line team by setting up mise en place and restocking stations as needed.
• Maintain high standards of cleanliness, food safety, and sanitation in compliance with DOH regulations.
• Support food quality by flagging any discrepancies in ingredients or prep output.
• Participate in daily kitchen cleaning tasks, including sweeping, mopping, and equipment wipe-down.
• Other duties as assigned by the Supervisor.

DISHWASHER:

• Wash dishes, utensils, cookware, and kitchen equipment using proper sanitizing procedures.
• Keep dish pit clean, organized, and safe at all times.
• Assist with trash removal and proper recycling practices.
• Ensure cleanliness of kitchen floors, drains, and surfaces throughout service.
• Support BOH by helping restock clean wares, tools, and equipment in designated locations.
• Alert the manager or kitchen lead to any maintenance issues or inventory shortages.
• Other duties as assigned by the Supervisor.

SKILLS:

PREP:

• Strong knife-handling and prep skills.
• Ability to follow recipes precisely and consistently.
• Good communication and a collaborative attitude.

DISHWASHER: 

• Attention to detail and high standards for cleanliness.

• Ability to multitask and stay organized under pressure.

REQUIREMENTS:

• Flexible schedule, including availability on nights, weekends, and holidays.
• Ability to stand for long periods and lift up to 50 lbs.
• Experience in a high-volume kitchen preferred.
• Positive, proactive, and eager to learn.
