Executive Chef

Executive Chef - Corporate Dining (Chicago, IL) Salary: $90K/Yr - $100K/Yr. Other Forms of Compensation: Benefits. Bonus Eligible. As Executive Chef of a high‑end corporate account in downtown Chicago, you will lead culinary operations, ensuring exceptional client satisfaction and operational excellence. Key Responsibilities Operational excellence. Build outstanding relationships with clients. Manage cost controls and expenditures for the account. Plan and create all menus. Purchase and manage inventory. Roll out new culinary programs in conjunction with marketing and culinary teams. Plan menus according to established guidelines. Follow standardized recipes, portioning and presentation standards; complete and utilize daily production worksheets and waste log sheets. Taste completed meals to ensure quality. Train kitchen staff in food preparation, safe handling, operation of equipment, food safety and sanitation based on company and regulatory standards. Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas; ensure staff follow schedules. Maintain inventory of food and non‑food supplies within established guidelines, ensuring availability. Make decisions regarding utilization of leftover food products within company guidelines. Comply with federal, state, and local health and sanitation regulations and audit procedures. Follow facility department and company safety policies and procedures, including occurrence reporting. Participate and attend departmental meetings and staff development and professional programs. Qualifications 5 years of progressive culinary kitchen management experience in a high‑volume setting. High‑volume, complex foodservice operations experience desirable. Institutional and batch cooking experience. Hands‑on chef experience required. Comprehensive knowledge of food and catering trends with focus on quality, production sanitation, food cost controls and presentation. Proficiency with computers, including Microsoft Office Word, Excel, PowerPoint, Outlook, Email and the Internet. Willingness to participate in client satisfaction programs and activities.
