Trattoria Il Mulino at Hilton Nashville Downtown Trattoria Il Mulino at Hilton Nashville Downtown is seeking a passionate and experienced Chef de Cuisine to lead our culinary team and help bring the flavors and traditions of Italian cuisine to life. Located in the heart of downtown Nashville, Trattoria Il Mulino combines the warmth of Italian hospitality with the energy of one of the city’s premier destinations. We're looking for a hands‑on culinary leader who takes pride in scratch cooking, exceptional ingredients, consistent execution, and developing a strong kitchen team. What You’ll Do: Lead, coach, and develop the culinary team, creating a positive, collaborative, and accountable kitchen culture. Oversee daily kitchen operations, ensuring smooth and efficient service from preparation through execution. Maintain the highest standards of food quality, flavor, presentation, portioning, and consistency. Bring knowledge and passion for Italian cuisine, ingredients, techniques, and culinary traditions to the kitchen. Partner with the Executive Chef to develop, cost, and implement seasonal and special menus. Contribute creative ideas that enhance the restaurant’s culinary identity while maintaining the integrity of its Italian‑inspired offerings. Ensure recipes and established culinary standards are consistently followed. Train and assess team members on culinary techniques, recipes, presentation, sanitation, and service standards. Lead as a hands‑on culinary professional during daily operations and service. Participate in interviewing, training, performance coaching, and corrective action as applicable. Monitor food and labor costs and implement strategies to achieve financial goals without compromising quality. Manage inventory, product utilization, and waste to maximize the value of every ingredient. Oversee the organization, cleanliness, sanitation, and maintenance of the kitchen and culinary equipment. Ensure compliance with all food safety, health, sanitation, and workplace safety regulations. Collaborate with the Executive Restaurant Chef and hotel leadership to ensure a seamless guest experience. Respond professionally to guest feedback and concerns and take ownership of resolving culinary‑related issues. Monitor team performance and address opportunities for improvement through coaching and accountability. Perform other duties and responsibilities as assigned. What We’re Looking For: 3+ years of culinary leadership or management experience, preferably in a high‑volume restaurant or hotel environment. 4 Year College degree preferred in hospitality or culinary related field Strong knowledge of Italian cuisine and culinary techniques preferred. Experience with scratch cooking, recipe execution, menu development, and food presentation. Experience leading, coaching, training, and developing culinary teams. Strong understanding of food and labor cost management. Knowledge of food safety, sanitation, and applicable health regulations. Strong communication, organization, and problem‑solving skills. Ability to remain calm, focused, and professional in a fast‑paced kitchen environment. Strong attention to detail and a commitment to consistency. Ability to effectively manage multiple priorities while maintaining high standards.
