Culinary Lead (Prep Cook)- Fulltime

About ACRE Real School Lunch:
Since 2004, ACRE Real School Lunch has been cooking everything from scratch using only the best ingredients. Each day we serve over 2,500 delicious organic meals. Our successful lunch program promotes an optimistic outlook within the school, fosters community, and nurtures the individual. We are hiring for a full time Lead Cook at one of our San Francisco school locations. Our lunch program focuses on natural and organic foods, sustainably sourced, made from scratch on-site daily. The ideal Sous Chef will be excited about working with a team and collaborating closely with the Head Chef and kitchen staff to prepare our Acre School Lunch. You will look forward to working in friendly kitchens each day that are fast-paced and enjoy continuously moving in a busy kitchen. This position needs to have fast knife skills, a good understanding of food safety practices, and be willing to perform any task in the kitchen as needed.
Title: Lead Cook
Status: Full time for school year (runs August-June)
Hours: All school days (Monday-Friday) 7:00am-3:00pm during the school year
Cook foods for program under the direction of the head chef according to our standards and specifications including cleanliness standards
Maintain proper food temperatures when cooking and proper storage afterward
Ensure every dish leaving the kitchen meets the Head Chef and Acre standards for taste and presentation
Keeping the workstation and kitchen equipment clean, organized and sanitized
Perform a variety of prep and kitchen tasks, including chopping, slicing, cooking and cleaning.
Deliver service to the school community with grace and a sense of urgency
Food
Be willing to perform any kitchen task as needed
Basic cooking and seasoning of food
~ Communicate any inventory needs to the chef as they arise
Follow company guidelines when health inspections occur to ensure a positive and productive work environment during an inspection
Participate in the annual review given by management
Participate in 1 food safety training sessions per year given by management
Full time for 10-10 1/2 months during the school year (mid-August through mid-July)
All school days 7:00am - 3:00pm (Monday-Friday)
General high volume kitchen equipment
Must be able to occasionally work overtime for catering events as needed
High School diploma required; college in culinary arts, food service, hospitality or related field preferred.
Advanced cooking, baking and knife skills in high volume production
Ability to administer safe food practices and experience operating with cost-saving measures
Ability to maintain company standards of cleanliness and sanitation in kitchen
CA Food Handler Certificate
We partner with all of our schools with required finger printing, background checks, and any current and necessary vaccinations. Full time for 10-10 1/2 months during the school year (mid-August through mid-July)
All school days 7:00am - 3:00pm (Monday-Friday)
