Lead Cook — hed 11 (Michelin-Recognized Thai Fine Dining, San Francisco)
hed 11 is a Michelin-recognized Thai tasting menu restaurant in San Francisco, part of East West Cuisine Hospitality — a multi-concept restaurant group also behind hed NYC and hed Very Thai. We bring a refined, heritage-driven approach to Thai cuisine, pairing a seasonal tasting menu with a globally curated wine program.
We're looking for a Lead Cook to join our kitchen team and help execute our nine-course tasting menu at the highest level, night after night.
What You'll Do
- Execute and plate dishes to Michelin-level consistency and precision across our nine-course tasting menu
- Lead and support fellow line cooks during service, maintaining pace, accuracy, and communication on the line
- Assist with mise en place, prep, and inventory to keep the kitchen running smoothly
- Uphold food safety, cleanliness, and sanitation standards throughout every shift
- Collaborate closely with our Corporate Chef and kitchen leadership on menu execution and seasonal transitions
- Train and mentor junior cooks as needed
What We're Looking For
- 3+ years of experience in a similar role, ideally in a fine dining or high-volume tasting menu kitchen
- Strong knife skills, palate, and attention to detail
- Ability to thrive under pressure during service while maintaining consistency
- A genuine interest in Thai cuisine and technique (prior experience a plus, not required)
- Reliable, team-oriented, and coachable
