Overview Job Location: Fine Company - Las Vegas, NV 89135 Position Type: Full Time Salary Range: $75,000.00 - $80,000.00 Responsibilities Ensure that all guests feel welcome and are given responsive, professional, gracious service at all times. Perform all aspects of the position with efficiency, respect, friendliness, professionalism, teamwork, knowledge, patience, awareness, compassion, courtesy and self-motivating initiative. Understand the restaurant’s culinary philosophy; maintain attention to detail and follow through of all restaurant policies. Represent the restaurant professionally through effective communication, cooperation and relationships with all business partners. Collaborate with the team to create a culture and work environment based on respect; foster opportunities for staff to learn, grow and develop their abilities. Lead the management staff and ensure service standards align with external accrediting sources and the restaurant’s philosophy. Understand all programs, procedures, standards, specifications, guidelines and training programs. Offer positive solutions to problems and participate in decision-making. Maintain responsibility for timely updating of the Recipe Xchange website and its content. Oversee planning, organizing, training and leadership to achieve objectives in sales, costs, employee retention, guest service and satisfaction, food quality, cleanliness and sanitation. Provide leadership to create a culture of respect and opportunities for staff development through training. Document all recipes in a standard kitchen format and share with kitchen staff. Perform inventory and purchasing responsibilities daily. Assist in creating and sustaining a diverse internship program with Corporate Chef and Human Resources. Ensure all food and products are consistently prepared and served according to recipes, portioning, cooking and serving standards. Fill in where needed to ensure guest service standards and efficient operations. Develop staff in managerial and professional development and in food education. Prepare required paperwork, including forms, reports and schedules in an organized and timely manner. Keep equipment clean and in excellent working condition through inspection and preventative maintenance programs. Ensure product receiving is accurate and performed according to policies and procedures. Oversee performance appraisals and administer fair and consistent corrective action as needed. Understand and comply with health, safety and labor regulations at federal, state, county and municipal levels. Be knowledgeable of kitchen policies and procedures; enforce them consistently. Assist in creating a dynamic menu for Main Dining Room and Private Rooms that evolves regularly. Supervise the kitchen during prep and service periods; schedule labor to meet business needs while managing costs. Qualifications Preferred Qualifications: Well-groomed, good hygiene, good posture; maintain uniform and tools; act with integrity, honesty and knowledge aligned with the restaurant’s culture, values and mission; capable of expediting service; able to work nights, weekends and holidays. Preferred Education and Experience: Minimum of 6 years in kitchen preparation and cooking in a fine dining restaurant; at least 2 years in a management capacity; possess a Qualifying Certificate in Food Protection from the local health department that has jurisdiction over the employing property. Physical Requirements Ability to traverse all parts of the restaurant quickly. Ability to stand for prolonged periods and during entire shifts. Ability to lift at least 50 pounds, with assistance if more. Intermittent sitting at a desk and working on a computer. Read and verify information in various formats; visually inspect tools and equipment. Move quickly, including turning and bending; wrist flexibility for manual tasks. Exposure to heat, steam and cold in a kitchen environment. Reach overhead and below the knees; bend, twist, pull and stoop as needed. Must be mobile in walk-in refrigerator and freezer with temperatures from 40° F to -10° F.
