Compensation Salary: Pay Grade 13. Job Summary Executive Chef – oversee kitchen operations, maintain a safe and sanitary work environment, and direct meal preparation in accordance with corporate programs and guidelines. This role requires an energetic, entrepreneurial culinary professional ready to lead and inspire kitchen staff. Key Responsibilities Plan regular and modified menus according to established guidelines. Follow standardized recipes, portioning, and presentation standards; complete daily production worksheets and waste logs; taste meals for quality. Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation based on company and regulatory standards. Establish and maintain cleaning and maintenance schedules for equipment, storage, and work areas; ensure staff follow and complete assigned schedules. Maintain inventory of food and non‑food supplies within established guidelines, ensuring availability of necessary products. Make decisions regarding utilization of leftover food products within company guidelines. Comply with federal, state, and local health and sanitation regulations and department sanitation procedures, as evidenced by audits. Follow facility, department, and company safety policies and procedures, including incident reporting. Participate in departmental meetings, staff development, and professional programs as appropriate. Preferred Qualifications A.S. or equivalent experience. Minimum of 3‑5 years of progressive culinary/kitchen management experience. Experience with extensive catering, high‑volume, complex foodservice operations, institutional, and batch cooking. Hands‑on chef experience is a must. Comprehensive knowledge of food and catering trends focusing on quality, production, sanitation, food cost controls, and presentation. Proficient with computers, including Microsoft Office and email. ServSafe certified – highly desirable.
