Position Overview
We are seeking an experienced and visionary Executive Chef to lead a culinary team. The ideal candidate is a master of their craft with deep expertise in fresh seafood, superior fish-fabrication skills, and a passion for creating inventive, seasonal menus. As Executive Chef, you will drive kitchen operations, lead and mentor a professional back-of-house staff, design exclusive wine-pairing dinners, and manage full financial performance (P&L).
Key Responsibilities
Culinary Leadership & Menu Innovation: Design thoughtful, creative, and seasonal menus with a strong emphasis on fresh seafood. Conceptualize and execute high-end wine-pairing dinners and special culinary events.
Seafood & Culinary Expertise: Demonstrate exceptional knowledge of fresh fish and seafood species, sourcing, quality control, and precise, high-yield fish fileting/fabrication.
Operational & Team Management: Direct day-to-day kitchen operations, ensure flawless execution during service, and maintain strict standards for food quality, safety, and sanitation.
Team Building & Culture: Recruit, train, and mentor back-of-house staff. Cultivate a positive, collaborative, and professional kitchen environment focused on retention and personal career growth.
Financial Acumen (P&L): Manage food and labor costs, control inventory, optimize vendor relationships, and drive profitability to achieve line-item P&L targets without compromising quality.
Qualifications
Minimum 3–5 years of experience as an Executive Chef or Chef de Cuisine in a high-volume, premium dining environment.
Advanced expertise in fresh seafood sourcing, fabrication, and preparation techniques.
Proven track record of designing multi-course food and wine pairing menus.
Strong financial acumen with demonstrated experience managing budget, food/labor costs, and overall P&L performance.
