Fabio Trabocchi Restaurants, led by Fabio Trabocchi, is currently seeking experienced and hospitality-driven Captains to join our acclaimed team at Fiola Mare.
Fiola Mare is our premier coastal Italian seafood restaurant located on the Georgetown waterfront, offering refined, luxurious dining with sweeping views and world-class hospitality. Our menu highlights the finest seafood from around the globe, featuring elegant crudo, abundant seafood towers, and daily selections of whole fish, complemented by a celebrated wine program and expertly crafted cocktails.

Essential Duties & Responsibilities
The Executive Chef is responsible for leading all culinary operations while maintaining the highest standards of food quality, team performance, financial accountability, and guest experience.
Responsibilities include:
- Lead, mentor, and develop the culinary team through hands-on leadership and training
- Oversee daily kitchen operations, including prep, production, service, sanitation, and organization
- Ensure consistent execution, presentation, and quality of all menu items
- Drive menu development, seasonal specials, and culinary innovation while maintaining brand standards
- Manage food and labor costs, inventory, purchasing, and product utilization
- Maintain health, safety, and sanitation standards in accordance with company and DOH regulations
- Partner with front-of-house leadership to deliver an exceptional guest experience
- Assist with hiring, scheduling, performance management, and team development
- Maintain a positive, professional, and high-performing kitchen culture

Benefits include:
- Fabio Trabocchi Restaurants offers full-time employees company-subsidized health insurance. A full-time employee must work an average of 30 hours per week to qualify for health insurance benefits. Coverage begins on the first day of the month following the employee’s 60th day of employment. The insurance enrollment period is between 30 and 90 days of employment.

Qualifications
Ideal candidates will possess a passion for hospitality, strong service skills, and a commitment to excellence.
Requirements include:
- 5–7+ years of leadership experience in high-volume fine dining or upscale casual kitchens
- Experience with Italian cuisine.
- High-volume experience strongly preferred
- Exceptional communication and guest engagement skills
- Professional appearance and demeanor consistent with fine dining standards
- Ability to maintain composure in a fast-paced, high-pressure environment
- Strong attention to detail and organizational skills
- Commitment to teamwork, professionalism, and continuous learning
- Ability to stand for extended periods of time and lift as needed
