Overview


We are seeking an experienced and passionate Sous Pastry Chef to support our Pastry Chef in leading a high-volume, artisanal pastry program for our Norristown, PA operation.


The Sous Pastry Chef - Norristown, PA is a key leadership role responsible for producing exceptional, consistent pastry at scale for retail, wholesale, and catering. This leader will develop a talented team of pastry cooks, uphold the highest standards of craftsmanship and quality, and drive efficiency, profitability, and growth.

Key Responsibilities


Production & Technical Excellence

• Lead daily pastry production to fulfill retail, wholesale, and catering orders on time and to standard
• Conduct daily quality checks on all products to ensure consistency, taste, and presentation
• Maintain deep knowledge of ingredients, sourcing, and advanced pastry and baking techniques
• Ensure full compliance with health, safety, food handling, and quality control standards
• Expertly operate, maintain, and troubleshoot all pastry and baking equipment
• Maintain accurate, up-to-date recipes and kitchen documentation in company systems

Leadership & Operations

• Assist the Pastry Chef in training, coaching, and developing the pastry team through hands-on leadership and regular feedback
• Create and manage daily production lists, staff schedules, and labor to meet demand and optimize profitability
• Review timecards, manage inventory ordering in partnership with the ordering manager, and minimize waste
• Foster a clean, organized, food-safe, and collaborative kitchen culture built on excellence, accountability, and continuous improvement
• Assist with interviewing, hiring, and onboarding new team members
• Maintain clear communication with kitchen management, department heads, and cross-functional teams

Growth & Business Development

• Support the expansion of the pastry team and program through new stages of growth
• Collaborate with the Pastry Chef to develop new menu items that align with brand standards
• Identify and implement process improvements to increase productivity and reduce waste
• Partner with sales and marketing to promote products and drive revenue

Qualifications

• 5-7+ years of professional pastry experience in a high-volume bakery, patisserie, hotel, or restaurant
• Proven leadership experience mentoring and developing a team of pastry cooks
• Exceptional organizational skills with experience managing production schedules, ordering, and inventory
• Strong financial acumen with ability to manage labor, food cost, and cost-effective recipe development
• Proficiency with bakery management systems and kitchen software
• Excellent communication and collaboration skills
• Passion for continuous learning and both traditional and innovative pastry techniques
• ServSafe or equivalent food safety certification preferred
