Sous Chef

Drift In

Job Description Drift In is seeking a Sous Chef with upscale, high-volume restaurant experience to join the crew at our vibrant outdoor restaurant in the West Village overlooking the Hudson River. The Sous Chef will develop and uphold existing systems for the preparation and production of the menu while managing BOH staff, expediting all food from the kitchen, ensuring proper execution of dishes, and maintaining a positive financial budget. Key Responsibilities Leading and cooking on the line, assisting in planning and pricing menu items, cost analysis, inventory management, labor management, and record keeping. Providing comprehensive leadership and management to all kitchen staff and operations, ensuring professionalism and adherence to company policies, procedures, and standards. Mastering menu item knowledge and strictly adhering to recipe specifications. Overseeing the pass and expediter station to ensure speedy and proper delivery of food to guests. Hiring and onboarding kitchen personnel. Completing daily reports and checklists; conducting training sessions for managers and staff. Conducting daily DOH walk-throughs and enforcing sanitary practices for food handling and cleanliness. Managing the schedule for hourly BOH employees using approved technology in line with labor budgets. Monitoring manager feedback logs and addressing food-related concerns promptly. Ensuring Department of Health food service standards are met; enforcing uniform and hygiene policies. Supervising maintenance, cleanliness, and organization of kitchen areas, including deep cleaning schedules. Conducting precise weekly inventory and vendor ordering processes. Managing receiving procedures to ensure meticulous handling and storage of food items. Conducting weekly meetings with corporate and events teams to review upcoming events, processes, P&L, and business matters. Minimum Qualifications Tier 1 3+ years in a Chef de Cuisine or comparable role overseeing annual food sales revenue of $3 million or more. Experience leading a team of 30 personnel or more. Experience executing high-volume, elevated cuisines. Experience directing subordinate managers to maintain quality and service levels. Culinary degree or equivalent certification in culinary arts. Ability to walk, stand, bend continuously and for extended periods; able to lift 30+ lbs. Able to work nights, weekends, holidays, and variable schedule. Strong knowledge of industry safety standards and procedures. Polished personal presentation. Must love sunsets. Tier 2 1+ year in a Kitchen Management role overseeing annual food sales revenue of $2 million or more. Experience leading a team of 15 personnel or more. Experience executing high-volume, elevated cuisines. Experience directing subordinate managers to maintain quality and service levels. Ability to walk, stand, bend continuously and for extended periods; able to lift 30+ lbs. Able to work nights, weekends, holidays, and variable schedule. Strong knowledge of industry safety standards and procedures. Polished personal presentation. Must love sunsets. Physical Demands and Work Environment Employees must walk, stand, remain stationary during shifts; reach, bend, lift, carry, stoop, wipe; wash hands frequently; lift or move up to 35 lbs.
