Sous Chef – Flagler Station Steakhouse in Islamorada, Florida

Flagler Station Steakhouse is seeking an experienced, disciplined, and hands-on Sous Chef to join our culinary leadership team. This is an excellent opportunity for a talented chef who takes pride in premium ingredients, precise execution, and consistently delivering an exceptional dining experience.

Our ideal candidate has experience in a high-end steakhouse or fine-dining kitchen and understands the standards required for prime steaks, fresh seafood, scratch-made sauces, and elevated presentations.

• Support the Executive Chef in leading all daily kitchen operations.
• Supervise, train, motivate, and develop the culinary team.
• Maintain consistent execution, flavor, presentation, and portion standards.
• Demonstrate strong knowledge of premium beef cuts, butchery, steak temperatures, resting, and proper handling.
• Assist with wood-fired grilling, broiling, sauté, sauce preparation, and upscale plating.
• Conduct pre-shift meetings and assign stations and production responsibilities.
• Inspect every station before service to ensure complete preparation and readiness.
• Actively work the line and lead the kitchen during busy services.
• Monitor ticket times and coordinate effectively with the front-of-house management team.
• Maintain proper inventory, ordering, receiving, rotation, and storage procedures.
• Control food costs, waste, overtime, and kitchen labor without sacrificing quality.
• Enforce recipes, portion controls, sanitation standards, and food-safety procedures.
• Ensure all equipment and kitchen areas are properly cleaned and maintained.
• Assist with menu development, daily features, private events, banquets, and seasonal promotions.
• Assume responsibility for kitchen operations in the Executive Chef’s absence.

• Minimum of three years of culinary leadership experience, preferably as a Sous Chef in a high-volume steakhouse or fine-dining restaurant.
• Strong experience with premium steaks, fresh seafood, scratch cooking, and classic sauces.
• Wood-fire grill or high-temperature broiler experience strongly preferred.
• Excellent knife skills and working knowledge of meat fabrication and butchery.
• Proven ability to lead a kitchen calmly and professionally during high-volume service.
• Strong organizational, communication, and time-management skills.
• Working knowledge of food cost, inventory control, scheduling, and labor management.
• Current ServSafe Manager certification preferred.
• Availability to work evenings, weekends, holidays, and special events.
• Ability to stand for extended periods and safely lift up to 50 pounds.
