• Source, inspect, and oversee premium seafood and seasonal ingredients.

• Develop, mentor, and train sushi chefs and apprentices.

• Create and refine omakase menus while maintaining authenticity and innovation.

• Manage inventory, ordering, food cost, waste, and labor budgets.

• Ensure smooth execution during every service while maintaining Michelin-level attention to detail.

• Collaborate with ownership and leadership on culinary direction and guest experience.

• Foster a positive, respectful, and accountable kitchen culture.

• Has extensive experience leading a high-end sushi or omakase kitchen.

• Demonstrates exceptional knife skills and traditional Japanese culinary techniques.
