Maintain the highest standards of quality, consistency, presentation, and food safety. Source, inspect, and oversee premium seafood and seasonal ingredients. Develop, mentor, and train sushi chefs and apprentices. Create and refine omakase menus while maintaining authenticity and innovation. Manage inventory, ordering, food cost, waste, and labor budgets. Ensure smooth execution during every service while maintaining Michelin-level attention to detail. Collaborate with ownership and leadership on culinary direction and guest experience. Foster a positive, respectful, and accountable kitchen culture. We're Looking For Someone Who Has extensive experience leading a high-end sushi or omakase kitchen. Demonstrates exceptional knife skills and traditional Japanese culinary techniques. Leads by example and isn't afraid to jump on the line when needed. Is reliable, dependable, and highly organized. Thrives in fast-paced, high-expectation environments. Can multitask while maintaining exceptional attention to detail. Develops people and builds strong culinary teams. Understands inventory management, ordering, scheduling, and labor control. Values teamwork, professionalism, and continuous improvement. Takes pride in every plate that leaves the kitchen.
