Sous Chef

Mediterranean Exploration Company

Hey there! We'd love to connect with you about joining the management team at Mediterranean Exploration Company in the heart of the Pearl District.We're currently looking for a Sous Chef with a strong foundation in line cooking with leadership or management experience. This is a dynamic, hands-on role within our leadership team that requires flexibility, adaptability and a willingness to jump into multiple positions of the kitchen: line, prep, and expo. On expo shifts, you'll step into the responsibilities of the Chef de Cuisine by leading and directing the day's service, while supporting the team in a busy and fast-faced environment.This position is centered around team leadership, coaching, daily production, training and administrative support, while working closely alongside the Chef de Cuisine and the rest of the in-house management team. We're looking for someone who leads by example, communicates directly and helps uphold the standards that define both our food and our hospitality.We also strongly believe in a culture of feedback, communication and growth. We conduct structured check-ins at 30, 60 and 90 days, followed by formal semi-annual performance reviews to support development, accountability and long-term success within our team.Who You Are:2+ years of experience as a Sous Chef or similar role (Chef experience a plus), with a strong foundation in prep and high-volume productionA collaborative, team-focused leader who trains and develops staff and communicates clearly across BOH/ FOHStrong technical cooking skills and an interest or experience with Mediterranean cuisineOrganized, detail-oriented and able to multitask while maintaining consistency and follow-throughComfortable leading service with verbally fired tickets and fast-paced communicationExperienced with food costing; including recipe costing, yields and maintaining targetsReliable, adaptable and composed in fast-paced environmentsHolds a valid Food Handler's Card or is able to obtain one upon hireWork Environment:Continuous standing, walking, bending, and repetitive motion (up to 12-hour shifts)Frequent lifting up to 25 lbs; occasional lifting up to 50-100 lbs with assistanceModerate to high noise levelsThe Perks - What's In It For You!:Paid Time Off - Tenure accrual policy.
