Executive Chef - High-Volume Catering & Team Leadership

Eurest Position Title: Executive Chef – Chicago, IL Salary: $100,000 - $110,000 Job Summary This executive chef will oversee kitchen operations while maintaining a safe and sanitary environment. Responsibilities include menu planning, staff training, inventory control, and meeting health and sanitation regulations. Key Responsibilities Plan regular and modified menus according to established guidelines. Follow standardized recipes, portioning and presentation standards; maintain daily production worksheets and waste logs; taste finished meals to ensure quality. Train kitchen staff in food preparation, safe handling, equipment operation, food safety, and sanitation based on company and regulatory standards. Establish and maintain cleaning and maintenance schedules for equipment, storage and work areas; ensure staff follows schedules. Maintain inventory of food and non‑food supplies within established guidelines and ensure product availability. Make decisions regarding utilization of leftover food products in line with company guidelines. Comply with federal, state and local health and sanitation regulations and participate in audits. Follow facility, department and company safety policies; report occurrences as required. Participate in departmental meetings, staff development, and professional programs. Preferred Qualifications A.S. or equivalent experience. 5+ years of progressive culinary/kitchen management experience or equivalent training. Extensive catering experience (plus). High‑volume, complex foodservice operations experience (highly desirable). Institutional and batch cooking experience. Hands‑on chef experience required. Comprehensive knowledge of food and catering trends with a focus on quality, production, sanitation, food cost controls, and presentation. Proficiency with computers, including Microsoft Office and internet applications. Willingness to participate in client satisfaction programs. ServSafe certification (highly desirable).
