Longman & Eagle is looking for a Sous Chef to join our team.
For over 16 years, Longman & Eagle has been one of Chicago's iconic restaurants, known for thoughtful food, an exceptional whiskey program, and a kitchen that values creativity as much as consistency. We are a Michelin Bib Gourmand Restaurant focused on thoughtful cooking with strong fundamentals and food that is both refined yet approachable. We focus on cooking by hand & from scratch using local and seasonal ingredients with an always changing menu. We're looking for someone who wants to be part of a restaurant that continues to evolve while staying true to what made it great.
This isn't just a management position. We're looking for a cook first; someone who loves being on the line, takes pride in execution, and wants to help lead a talented team. The right candidate is organized, calm under pressure, and excited to mentor cooks while maintaining high standards every service.
We are looking for a candidate with strong leadership skills, patience, a mind for systems, and the ability to execute creatively at high levels and higher volumes.
What You'll Do
- Lead services alongside the Executive Chef.
- Coach and develop line cooks through hands-on leadership and create a culture and work environment based on respect.
- Maintain the highest standards of food quality, consistency, and cleanliness.
- Assist with ordering, scheduling, prep, and food costing.
- Help develop seasonal menus.
- Expedite busy services efficiently and communicate with the kitchen, front of house staff, and management.
- Ensure systems are followed while continually looking for ways to improve them.
- Foster a positive, professional, and accountable kitchen culture.
What We're Looking For
- 2+ years of kitchen leadership experience in a high-volume, chef-driven restaurant.
- Strong cooking fundamentals and excellent palate.
- Passion for seasonal ingredients and thoughtful, ingredient-driven cooking.
- Ability to stay composed and lead during busy services.
- Strong communication, organization, and problem solving skills.
- A desire to teach, learn, and continuously improve.
