Propósito de la Posición: el sous chef ayuda al chef ejecutivo en las actividades diarias de la cocina, incluido el desarrollo del menú,elinventario,lacompradesuministrosyelcontroldecostos. Responsabilidades Esenciales: •Responsable de la logísticade la cocina cuando el chef está ausente o ayudar al chef cuando está presente(ejemplos específicos:programación,nómina,descripcionesdelmenú) •Asistirconlacapacitaciónalimentariadelpersonalylageneracióndelosmaterialesdecapacitaciónnecesarios(crear recetas que puedan seguir, programar degustaciones para mantener la calidad del producto constante, enseñar sobre los ingredientes y su origen, etc. Gestióndepersonal/manode obra •Reviseygestionecontinuamenteeldesempeñodetodoelpersonalculinarioycompartacomentariosconelchef (supervise a todos los cocineros y su trabajo, asesore cuando se necesiten mejoras, avise a directiva si hay problemas, etc.) • Comprender, seguir y orientar a otros en los procedimientos de seguridad actuales. Presentacionde C om i da / P r odu c t o • Mantenga la calidad y la presentación de la comida para lograr comentarios y reseñas favorables de los huéspedes en Open Tableyotrossitios,incluidaslasredessociales,etc.
- Ayude y haga la preparación de los platos mientras capacita a otros para lograr la consistencia.
- Cree continuamente nuevas ofertas (especiales y cambios de menú de temporada)
- Mantenga un inventario adecuado de los alimentos: asegúrese de que no se agoten y de que estén siempre frescos, etc.
- Mantener comunicación con la gerencia de FOH sobre el inventario de porcelana necesario para la ejecución de todos los menús.
- Asistaalchefenprocedimientoscuandosetratadecambiosenelmenú(presentarlosplatos,creardescripcionesdel menú,organizarladegustaciónparaelpersonaldeserviciodemaneraoportuna,etc.)
- Mantenga actualizada toda la documentación culinaria y del equipo, incluidos, entre otros:
- Comuníquese y trabaje en estrecha colaboración con el equipo de relaciones públicas para destacar las ofertas de alimentos y responder a las consultas de los medios.
- Asistir a todas las reuniones solicitadas por el chef
- Consulte la correspondencia (OUTLOOK) de la empresa para todas las comunicaciones entrantes por correo electrónico.
- Participe en los informes de Avero / Manténgase al día con los informes diarios.
- Asegurar el cumplimiento de todas las reglas y regulaciones del departamento de salud para pasar las inspecciones.
- Conocimiento básico de preparación de comida, experiencia en limpieza es bienvenida
- Habilidad para comunicarse y comprender instrucciones en ingles para garantizar la seguridad en el lugar de trabajo. Capacidad para comprender, responder y interactiar con compañeros de trabajo, gerentes y invitados en ingles.
- Habilidad de manejar el tiempo y capaz de trabajar bajo presión y manejar altos volúmenes de producción
- Habilidades de comprensión de lectura y hablado
- Disciplina para seguir direcciones y estándares establecidos
- Habilidad de levantar hasta 50 lbs
